Mole Sauce- This traditional Mexican sauce is entirely delicious and very easy. Tastes great on chicken, or anything else. I used it in enchiladas, instead of enchilada sauce.
Ingredients
- 2 teaspoons vegetable oil
- 1/4 cup finely chopped onion
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 teaspoon ground cumin
- 1 teaspoon dried cilantro
- 1 clove garlic, minced
- 1 (10.75 ounce) can stewed tomatoes (or 2 fresh tomatoes, cooked down a little)
- 1 (4 ounce) can diced green chile peppers (If you want it to be spicy, use jalapeƱos. Or go half and half)
Directions
- Heat the oil in a medium saucepan over medium heat, and cook the onion until tender. Mix in cocoa powder, cumin, cilantro, and garlic. Stir in the tomatoes and green chile peppers. Bring to a boil, reduce heat to low, cover, and simmer 20 minutes.
- Run the sauce through a blender or food processor.
- Serve on/in burritos, enchiladas, chicken, beef, etc.
